“Round fish” or fish “in the round,” with head, viscera, tail, etc. still intact. Among many fish offered whole are shark, tuna, swordfish, salmon, tilapia, red snapper, trout, mackerel, striped bass, ocean perch and black sea bass.
A fish fillet is the flesh of a fish which has been cut or sliced away from the bone by cutting lengthwise along one side of the fish parallel to the backbone. In preparation for filleting, any scales on the fish should be removed.
The contents of the stomach also need careful detaching from the fillet. Because fish fillets do not contain the larger bones running along the vertebrae, they are often said to be “boneless”.
Crustaceans include several groups of animals, such as lobsters, crabs, prawns and barnacles. Crustaceans are fundamentally aquatic and inhabit all depths and in different environments, such as the sea, brackish water and fresh water.
A few have colonized the terrestrial environment, like the cochineal of humidity.
The molluscs form one of the great edges of the animal kingdom. They are invertebrates with a soft body, naked or protected by a shell.
Molluscs are the most numerous invertebrates after arthropods, and include such well-known forms as clams, machas, navajuelas, oysters, squid, octopus, slugs and a great diversity of snails, both marine and terrestrial.
They are present in most habitats: sweet, marine, terrestrial. These animals are usually common coastal organisms around the world.
